The Glass
A great Old-Fashioned should be served in a lo-ball tumbler. Often called Old-Fashioned Glass. These glasses are characterised by a round, heavy base and are often made from cut crystal. The wide base gives stability and space for the ingredients.
With the large ice cube, 100ml of cocktail and garnish,. the glass needs width and this also gives space for the bouquet generated by the bitters, bourbon and other ingredients . -
The Ice
Not all ice is equal. A perfect ice cube for an Old-Fashioned is a very large, over-sized square cube. Usually 2 to 3 inches square, depending on the size of the glass.
The reason the cube is so large is partly for the look and partly because the larger cube has far less surface area to melt when compared to a similar volume of ice in smaller cubes. It melts slower, makes the drink colder for longer and also, as a result reduces dilution of the cocktail significantly. -
The Alcohol
The Old Fashioned is traditionally made with bourbon or rye, sometimes with scotch, however, it’s a very versatile cocktail and can be built with other spirits, such as rum, brandy, tequila and combined with bitters and ingredients like Pedro Ximinez Sherry, Disarronno Amaretto, brown butter, bacon fat, maple syrup, maraschino cherries, apple brandy, aperol, flavoured syrups, mezcal, creme de cacao, honey, even sweet tea.
The only limit is your imagination. -
The Garnish
Traditional Old Fashioned’s suggest a slice of orange. Later varietals moved into using Maraschino black cherries in syrup. I’ve seen cinnamon sticks used and I use fresh lime in my Naval Old Fashioned. A couple of Amaretti biscuits go down a treat with our Almond Old Fashioned. I love using blood orange slices in my Classic Old Fashioned, and Amarena Maraschino Cherries in our Velvet Old fashioned. However you do, make sure you drink responsibly.
Cocktail making instructions
Fat Adam’s make great cocktails easy.
All our cocktails are pre-mixed and are all served as 100ml measures. Before service starts you will need:
1. Ice. For Old Fashioned’s and Negroni’s the ideal serve is a large square ice cube. Whilst standard ice cubes will serve, the large square cubes are best for these drinks.
2. An old Fashioned Tumbler. This is usually a cut gloss lo-ball round tumbler (as in the pictures)
3. A jigger. Ideally 100ml or 75ml for speed of service
4. Garnish. We suggest the following garnishes go with our cocktails:
i. Classic Old Fashioned: A slice of orange OR two Maraschino Cherries
ii. Naval Old Fashioned: A slice of lime or two Maraschino Cherries
iii. Classic Rye Old Fashioned: A slice or orange and a cinnamon stick
iv. Velvet Old Fashioned: A slice of orange OR two Maraschino Cherries
v. Almond Old Fashioned: Two Amaretti biscuits on the side, a slide of orange inside. Serve with salted almonds if preferred. Or salted caramel ice cream.
vi: Classic Negroni: A twist of orange peel, squeezed above the cocktail just before serving.
vii: Naval Negroni: A twist of orange peel or a slice of lime.
Building an Old Fashioned or Negroni cocktail
The cocktail is built simply and quickly.
1. Put square ice cube in glass
2. Pour 100ml/ 75ml of the chosen cocktail into the glass from the jigger/ measure
3. Add the garnish
4. Serve.
The whole process takes around ten seconds.
That is all there is to it!
Then, there is the Espresso Martini & Double Espresso Martini
For the Espresso Martini, you will need the following:
This takes a bit longer, maybe 45 seconds. You will need:
1. Ice cubes. Any kind
2. Cocktail shaker
3. Coupe style cocktail glass (or large martini glass)
4. Real coffee beans
To build the cocktail:
1. Add a good amount of ice to the cocktail shaker
2. Add 100ml of cocktail to the shaker using the measure
3. Shake vigorously for at least 30 seconds but no more than a minute
4. Pour the frothy mixture into the coupe glass
5. Dress with three coffee beans
6. Serve
